Chunky Chocolate Chip Cookies

From a sad entry to an inspiring recipe for the upcoming holidays. For the last few months that I've been baking, this is the first time that I've finally baked the chunky chocolate chip cookies that I've always wanted. If I had known it would be so easy, I would have done this a long time ago.

2 1/4 cups  Flour

3/4    tsp    Baking Powder

3/4    tsp    Salt

1/4    tsp    Baking Soda

1 1/2 stick Butter

1/2    cup   Brown Sugar

1/3    cup   Light Corn Syrup

1       large Egg

2       tsp    Vanilla Extract

2       cups  Semi-sweet Chocolate Chips

*In a bowl, softened butter and mix in brown sugar and light corn syrup. Add egg, vanilla extract and stir well.

*Mix flour and fold in chocolate chips.

*Form batter into a ball and place in baking trays.

*Bake at 175c for 10-12 minutes.

They look so gooey and literally delicious. Can't wait to bake another batch before Christmas.
And oh! Only mixed everything by hand. Enjoy!

Simple and Easy Sushi Bake

Hello November! How is everyone holding up? I hope that most of you are in good spirit and in good health.

At the start of the Covid19 pandemic, a lot of great recipes and "HIT" "IT" dishes came to life to make most of us famish. For me, it was the Sushi Bake craze that got me thinking why the heck are people going crazy about it? Why is everyone making some and selling it?

People are actually making profits from it and I don't know why it took almost 7 months for me to come up with my own easy twist. I have made sushi recipes before (learned it from my Turkish friends and recipes are readily available online) and so after months of contemplation, I came up with a super simple and super easy Sushi Bake with 3 kinds of toppings - Tuna, Kani, Sweet Ham.

Ingredients:
1cup   White Rice (Japanese Rice, if it's available)
1cup   Frozen Mixed Vegetables (optional)
5cups  Water
1cup   Sliced Cucumber
1cup   Kani
1cup   Sliced Sweet Ham (any meat will do - bacon will do well - even spam)
1cup   Japanese Mayo
1pc    Canned Tuna
1tbsp Sesame Oil
3tbsp Hoisin Sauce
3tbsp Fermented Korean Chili Paste
2tbsp Sesame Seeds
1tsp   Dried Basil
1tsp   Garlic Powder
1pack Nori Seaweeds

*Wash and drain Rice with running water. In a pot, pour in water and add Rice. Cook for 20 minutes then add frozen mixed vegetables. Simmer for another 10-15 minutes while adding water. I'm cooking the Rice in this recipe the Dutch way but to make it easier - Asian style is the best - Rice cooker :D

*In a bowl, mix drained Canned Tuna with Hoisin Sauce and Dried Basil. Set aside.

*In a different bowl, mix Kani with Garlic Powder and Japanese Mayo. Set aside.

*In another bowl, mix Sliced Sweet Ham with Fermented Korean Chili Paste. Set aside.

*Let the Rice cool for a few minutes before placing it in an oven safe dish ware. Spread evenly to the bottom of the dish ware then place sliced cucumber on top. Since this recipe is of 3 kinds of toppings, divide your topping placement 3 parts. First Tuna, Kani then Sweet Ham.

*Once all is placed, drizzle with Sesame Oil.

*Bake in the oven for 20 minutes.

*Once bake, garnished with Japanese Mayo, Sesame Seeds and Nori Strips (you cut them into strips - Nori Seaweeds are sold in big pieces).

Serve with Soy Sauce with Lemon and Nori Seaweeds Wrappers. But seriously, the topping choices for this one is endless. I want to try some mushrooms next time. Happy mid-week everyone!

Spicy Shrimp and Fish Spaghetti in Olive Oil

Today, decided to make myself some simple pasta dish. Naming it Spicy Shrimp and Fish Spaghetti in Olive Oil. I've made this meal a couple of months ago but this time, I updated the ingredients.  Also, learned how to peel the shrimps today - an interesting highlight for someone who has not been in the kitchen since I was diagnosed in March. Enjoy!

Ingredients and Procedures

100g   Spaghetti Noodles
3tbsp  Olive Oil
3tbsp  Minced Garlic
2tbsp  Sliced Onions
2tbsp  Tabasco Sauce
1tbsp  Butter
3tbsp  Grated Cheese
3tbsp  Cooked Fish Flakes
5pcs   Peeled Shrimps
7pcs   Basil Leaves
1cup   Diced Tomatoes
1cup   Broccoli (optional)
A Dash of Black Pepper

*Cooked spaghetti noodles as per packaging instruction. I do mine for 10 minutes. After 5 minutes, I add in the broccoli. Add additional 2 minutes and add in tomatoes.

*Take out tomatoes and reserved for later sauteing. Save spaghetti water for later - about half a cup. Set aside cooked spaghetti noodles with broccoli.

*In a pan, pour in olive oil, add onions, garlic. Sautee for 2 minutes. Add in butter and peeled shrimps. Sautee until shrimps are slightly cooked. Add in fish flakes, ground black pepper and then diced tomatoes. Add in tabasco sauce and 1/2 spaghetti water. Simmer for 2 minutes.

Chocolate Chip Cookies

Chocolate Chip Cookies has been my favourite. I've tried making my own but had failed a few times. Now, I'm proud to say that I am very much capable of preparing my own batter and cookies with a help from my baker boyfriend.<3 nbsp="" p="">

When I was in Holland, Martijn came across a recipe for Chocolate Chip Cookies and made some for me. It turned out really good thus, we decided to embrace it as our own recipe. It's easy to prepare and can be stored for weeks if you chose not to bake it just yet.

Ingredients and Procedures
275g Butter
275g Brown Sugar
225g White Sugar
2pcs  Eggs
1tsp  Vanilla Extract

*Mix all ingredients starting with Butter, Brown Sugar and White Sugar. Mix the Butter as it is (DON'T MELT THE BUTTER). Add in Eggs and Vanilla Extract. Mix well.

475g  Flour
2tbsp Baking Powder
300g  Chocolate Chips

*Gradually add Flour and Baking Powder mix to your Butter - Sugar - Egg - Vanilla Extract Mix. Mix well then add Chocolate Chips. Mold cookie dough in a sausage form with plastic wraps and let it rest in the fridge for 30 minutes before slicing and baking. See photos below.

* Baked at 180 degrees Celsius for 10-15 minutes.
Cinnamon and Nutmeg are optional flavors you can add :)
No need to spray the trays just arrange sliced cookie dough and bake.
Enjoy!

Beef Wraps

Beef Wraps had also been a favourite dish and I have always wanted to make my own wraps since I learn it from my Turkish friends a few years ago but never had the courage to do so, because flour and my skills don't really jive too well but lately, it has changed. Sharing below the steps on how I came up with this delish recipe.

Ingredients

Wraps
1 cup Flour
1 cup Milk
2 tbsp Oil
1/2 tsp Salt
1/2 tsp Baking Powder
1 tbsp Dried Basil (optional)

Mix Flour, Salt and Baking Powder in a bowl. Add in Milk and Oil. Mix well until sticky. Add more flour to have bread like consistency. Knead thinly and form into desired shape.

1/2 kg Beef (thinly sliced)
2 tbsp Oil
2 tbsp Soy Sauce
Dash of Black Pepper
1 Tomato (thinly sliced)
1 Onions (thinly sliced)
1/2 Cucumber (thinly sliced)
6 pcs Lettuce

3 tbsp Greek Yogurt, Add a dashed of Powdered Garlic and Salt to enhance the taste.

Step 1: In a medium pan, sautee Beef in Oil, dashed with Black Pepper and add Soy Sauce. Cook until Beef is tender.

Step 2: In a medium - large pan, place shaped wraps and cook until both sides are browned.

Step 3: In a plate, place wraps, add in Lettuce, Beef, Cucumbers, Onions, Tomatoes and top with Greek Yogurt.

It's a really fun and easy recipe. Give it a try :)

Microwave Two Cheese Bacon Mushroom Pizza

When I think of pizza, I always end up dreaming of something filled with Pepperoni, Ground Beef, Bacon, Onions, Tomatoes, Bell Peppers and loads of Cheese. Those are my favourite pizza toppings. Whatever pizza joint it is, I'm always sure that I'll find something to suit my tastebuds. Pizza has that effect on me, just notice the number of times I've mentioned PIZZA in one paragraph.

Anyway, I've been craving for it since last week and had decided to make it at home but to my dismay, I was unable to find a dough at the grocery store and I don't have pepperoni but the craving was too strong today, so I ended up making something with sliced bread as dough and bacon, tomatoes, mushroom, parmesan and cheddar cheese. Nom! It's an easy peasy recipe that anyone can do at home. Check out the photo and instructions below. Enjoy!

Step 1. Ingredients
            * Tomato Sauce
            * Sliced Bacons
            * Sliced Mushrooms
            * Sliced Onions
            * Sliced Tomatoes (optional)
            * Sliced Bread
            * Parmesan and Cheddar Cheese (pizza topping)
            * Dashed of Tarragon

Step 2. Flatten Sliced Bread with spoon as seen on the photo above before putting it in a toaster to make it a little crunchy but don't over do it. A minute or two in the toaster is enough.

Step 3. Spread Tomato Sauce and Dashed with Parmesan Cheese.

Step 4. Add in toppings, Bacon, Mushroom, Onions and Tomatoes.

Step 5. Top with Cheddar Cheese (pizza topping) and Tarragon and microwave for 6 minutes.

Garnished with some more cheese and tarragon - Serve :)

I have always been intrigued by Mac 'n Cheese. It has been on top of my must try to cook meals but was never a priority until today. Chinese Sausage Omelette

What's your favourite breakfast meal? Mine falls with Eggs Benedict, Filipino Breakfast (fried rice, tocino, longganiza and fried egg), Bacon and Pancakes, Toast and Butter and Cold Pasta (it's weird but it's really good). I'm not a fan of Omelette. I actually want it once in a blue moon and today must be a blue moon. Suddenly, found myself in the kitchen making some Chinese Sausage Omelette. This is one of those easy recipes that anyone can whip at home.
Ingredients
4 pcs Medium Eggs
2 pcs Chinese Sausage (King's brand)
1 Small Onion (sliced)
2 Medium Tomato (diced)
Dash of Black Pepper
Dash of Basil
Dash of Rosemary
Dash of Cayenne Powder

Step 1: In a pan, Simmer/ Cook Chinese Sausage in 1/2 cup water. Wait until natural oil comes out. Season with Black Pepper, Basil, Rosemary and Cayenne Powder. Sautee. Add Onions and Tomatoes. Let cook for 1 minute.

Step 2: In a bowl, thoroughly beat Eggs. Pour on Sauteed Chinese Sausage in the pan. Just like making pancakes, wait for eggs to soaked in before flipping it.

Step 3: Cut according to desired portion. Place in a plate, add Cream Cheese on top (optional), garnished with dried spices (optional) - pair with toasted bread.

Stuffed Bell Peppers

A few years ago, I got to taste a very interesting dish that was made by my friend's mother. It was Stuffed Bell Peppers (rice, beef and spices). I thought it was a clever recipe and an easy one. Being Asian, it felt like I was somewhere in the Mediterranean. Since, we're having a long weekend and I don't have much to do, I've decided to give it a go and make my own version of it. It taste as a good and I'm proud of it. Here are the steps and what you need to make your own Stuffed Bell Peppers.

You will need:
2 Large Bell Peppers
3 Cups Hot Water
1 Cup Ground Beef
2 Tomatoes (Cubed)
1 Onions (Cubed)
1 Tbsp Crashed Garlic
1 Tbsp Olive Oil
1 Tbsp Tomato Paste
1 Tbsp Ricotta Cheese (or any cheese you prefer)
4 Tbsp Couscous
1 Tbsp Butter
2 Tbsp Mixed Vegetbales (optional)
Dash of Salt and Black Pepper
Dash of Tarragon

Preheat oven at 300 degrees C
1. In a medium pan, Sautee Beef, Onions, Garlic and season with Salt and Black Pepper. Once Beef is brown, add Tomatoes and Tomato Paste. Let it simmer for 5 minutes.
2. Pour 1 Cup of Water in cooking ware, add Mixed Vegetables and Couscous. Stir continuously when water starts to dry up, add Butter and mix. Simmer for a few minutes.
3. Mix Beef and Couscous together - this will serve as your stuffing.
4. Clean your Bell Peppers through running water. Make a hole at the center and take off seeds and even the bottom edge by slicing a thin layer. Soak in 2 Cups Boiling Water for 5 mins.
5. Once Bell Peppers are soft to the touch, stuff with Mixed Beef and Couscous. Place in bake ware and top with Choice of Cheese and Baked for 25 minutes.
Bon Appetite <3 p="">

Couscous in a bowl

Back to cooking for this weekend at least. Decided to make some Turmeric Couscous topped with Pan Seared Yellow Pin Tuna with Cream Tabasco Sauce and Feta Cheese.

In a skillet, Pan Seared Sliced Sashimi Tuna (seasoned with Black Pepper, Dried Basil, Dried Rosemary and Salt) in 1tbsp Olive Oil.  Cook until golden brown / light brown.

In a sauce pan, Cook 4tbsp of Couscous and 4tbsp of Mixed Vegetables (optional) in 1 cup of water under low heat. Add dash of Turmeric, Garlic, Black Pepper, Basil. Simmer. Add 1tbsp Butter. Mix and add Sliced Tomatoes and Onions. Cook for 5 minutes.

In a clean pan, Melt 1tbsp butter, add 50ml All Purpose Cream. Mix. Season with Garlic, Salt, Black Pepper and Oregano. Mix and add 1tbsp Tabasco Sauce.

Easy peasy :) Just add Feta Cheese on top of the Cream Sauce. Bon Appetite!

1. In a medium size pan, add Water, Bacon, Chinese Sausage and Hungarian Sausage. Bring to boil until natural oils comes out.
2. Add in crashed Garlic, Onions. Dashed with Black Pepper, Basil and Rosemary. Sauté. Leave for 2 minutes.
2. Add in Tomatoes, Red Bell Pepper and Black Olives. Sauté. Leave for 2 minutes.

Ingredients
1/2 Cup Water
Strips of Bacon (cubes)
Chinese Sausage (cut diagonally)
Hungarian Sausage (cut diagonally)
1 Cup of Mixed Vegetables (frozen, readily available in supermarkets)
Fresh Tomatoes (half a cup, cubes)

1 Pack Cheese Melt
Dash of Black Pepper
Dash of Rosemary
Dash of Basil
Dash of Tarragon

1 Cup Pasta Noodles (boiled in water with salt and oil)

Spam Sushi & Shrimps

So, for the passed few months, I've always wondered how a Spam Sushi looks like or how to make it. I know a friend from FB who loves this meal so much, that when he travels, he makes a handful for himself and last, I just caught myself browsing photos via google and today, I decided to make some.

SPAM SUSHI
You Will Need
1 cup cooked rice (minced garlic & mixed vegetables, optional)
1 can spam (any flavour will do)
3 pcs roasted seaweeds
2 eggs (beaten with black pepper, parsley & cilantro, optional)
3 tablespoon cooking oil
Dash of Thyme
Dash of Lea & Perrins
Dash of Minced Garlic
Sushi Bamboo Roller

Procedure
1. Cooked rice along with mixed vegetables and minced garlic in rice cooker with 2 cups of water. Once cook, let it cool.
2. Slice spam evenly and cook until golden brown or a bit reddish. DON'T OVER COOK. Set aside.
3. Beat 2 eggs, add dash of black pepper, parsley and cilantro. In a pan, add 1 tablespoon cooking oil and fry egg until cook. Don't fold, just let it spread throughout the pan. Flip, the other side to cook. Set aside. Check photo below :)

Let's MAKE SPAM SUSHI ^_^
1. In your sushi roller, PLACE roasted seaweeds, ADD rice, making sure that it follows the size of your spam slices. ADD sliced spams and eggs (eggs is shaped after the spam).
2. ADD another layer of rice.
3. FOLD and ROLL :)
*slice evenly

SHRIMPS
1. Using a kitchen scissor, CLEAN shrimps of its head and those tiny hand thingy. WASH and DRAIN.
2. ADD 2 tablespoon cooking oil, dash of black pepper and minced garlic, ADD shrimps.
3. Once shrimps changes to a shade of pink, ADD Lea & Perrins, sauté.
4. Simmer, until shrimps turns orangey.

Finish Product :) I just sprinkled some Terragon for an artsy effect on it and placed the skinned shrimps in a tea cup :)

It's my first time to try Spam Sushi and I must say, it is easy and so yummy. At first, I was hesitant with how I can fold and roll it, given that a slice spam is not round but flat but it worked out anyway. Looking forward to serving this to my friends, if they come over :)

Pepperoni Egg Basket

A few days ago, a typhoon hit our country and today, another one is on it's way. And not just an ordinary one but a super typhoon, which they say is as strong as KATRINA that hit the US. We're all keeping a positive vibe on here though deep inside we're a little scared but I'm certain we're all going to be alright.

Now, on a lighter note. I'm tryna find ways to cook using the resources we have at home. Just in case, our gas supply goes off (cos obviously, I forgot when we bought it :D). So, I decided to experiment on eggs, pepperoni and the microwave and woohlaah!
Using a microwaveable bowl, BEAT 2 eggs
ADD a DASHED of black pepper and minced garlic
ADD thinly sliced tomatoes and onions
ADD grated cheese
ADD pepperoni
COOK in microwave oven for 3 minutes
TOP with spring onions, dried coriander and parsley
Finish product :) Must admit, it was pretty AWESOME for an experiment. The egg tasted good and it was just perfect. OIL FREE and really yum!

Finish product
I love pasta and I'm proud to say that it's one of my specialty - be it beef, chicken or seafoods - you can count that I make the yummiest one :)

Also, it's my first time to use cucumber as garnish and surprisingly it blended well with the sauce and pasta. And must you wonder why I'm using the twisted pasta - I prefer this over the regular ones. It's easier to dress up and present :)

PS for boiling the pasta - I suggest that you make it to 2 tbsp of oil instead of just one to make it more flexible after draining :)

Beefy Situation

Ingredients
* Beef Strips
(it's a thinly sliced meat that looks like a bacon but it's beef)
* Sauce Mix
Dash of Basil
Dash of Coriander
Dash of Black Pepper
Dash of Minced Garlic
Dash of Parsley
Dash of Turmeric
Dash of Curry Powder
(i indicated "dash" because the flavour solely depends on your appetite for spices. you can go up higher than just a dash on any of the spices i've mentioned. also you can opt for fresh basil, parsley and coriander but since this is for a sauce where the beef is to be soaked, it is best to used the ones sold by bottles or minced dried leaves)
A Tablespoon of Honey
A Tablespoon of Korean Pepper Paste
A Tablespoon of Olive Oil
One Whole Yellow Lemon
Mixed Vegetables - boiled, optional
(diced carrots, onions, tomatoes, green peas and corn/ broccoli was optional)

Garnish
Orange Skin
Lemon
Dried Tarragon Leaves
Olives
Procedure
*Wash Beef Strips in running water. Drain. Set aside.
*In a bowl, Mix all Sauce Ingredients. Add Beef Strip. Mix well. Set aside.
*Heat frying pan over medium fire and add Beef Strips.
*Cook until Sauce lightly disappears or when Beef Strips becomes a little semi grilled looking.
(i didn't indicate adding of oil while heating the frying pan because we already added Olive Oil on the Sauce Mix thus the Beef Strips are to cook on its own oil while being semi grilled on the pan.)
Finish Product. Since I'm really into food presentation, I decided to used the Orange Skin as a bowl for the Beef Strips and garnish some of its peeled skin on the entire meal. Food presentation is not just for the professionals but also for those foodie who loves a little twist in their platter :)

I superbly enjoy today's experiment. Yesterday, I saw Jamie Oliver mixing up some BBQ sauce for a recipe and on it, he added honey and I've been mixing some blends since I started preparing Korean Beef BBQ in the passed months and earlier, I thought Honey would totally rock the flavour with its sweet tingle sensation and it didn't fail me. I absolutely love the smell and taste. If only there was a way to smell the photos I've taken - you'd surely fall in love with it :) 'Til next cooking experiment.

xoxo
Niksie :)
